Castellare di Castellina

Castellare di Castellina is a winery situated in the heart of the Chianti Classico area, in Castellina in Chianti. There are 33 hectares of vineyards located on the hills of a natural amphitheater facing south-east, the production is about 350,000 bottles of wine per year. With an average altitude of 370 m. a.s.l., the vineyards are between 15 and 40 years old. There are also about 20 ha of olive trees and the rest divided into mixed cultivation and woods. Excellent exposure to the sun, good water drainage, a mixed soil of calcareous marl, marl and little clay give wines, both red and white, very well structured, intense and suitable for long bottle aging. Castellare aims to produce wine of the best possible quality, while maintaining tradition and innovation together. The tradition in the care of the vineyards and the land, in the choice of producing a wine respecting the Chianti Classico using only native Tuscan grape varieties. The innovation was pursued first with the creation of the first experimental Chianti vineyard together with the University of Milan and the University of Florence to implement the first scientific selection of Sangiovese clones (here called Sangioveto), then with the introduction of the use of the barrique in addition to the constant care of each cellar process that continues today in that incessant and always new work that is the production of quality wines. Synthetic chemicals have not always been used out of respect for nature and to have organic wines. This philosophy is proved by the labels that each year have the design of a different bird.
